Sambal tumis udang Pa’Belang

Sekali-sekala nak pekena sambal tumis berminyak la pulak. Makanan berminyak ni tak boleh diamalkan sangat. Selalunya cabai sambai tumeh masak dengan ayaq ja.

  • 2 genggam cili kering dibuang biji dan direbus sebentar.Kisar bersama sedikit belacan. 2 handful of dried chillies,remove seeds and boil for awhile.Blend with a small piece of prawn paste (optional).
  • Sedikit belacan(tak perlu sangat). A small piece of prawn paste.
Penaeus monodon

1 kilo udang harimau1 kg of tiger prawns.

Potong hujung tajam di kepala dan ekor. Buang kantung lumpur di kepala dan tanggalkan satu segmen pada kulit. Cut off the sharp ends on both the heads and the tails. Remove the mud sacs and the 3rd segments of the shells.

  • Tumis hirisan 5 ulas bawang putih hingga kuning keemasan. Fry chopped garlic (5 pips) until golden brown.
  • Masukkan cili mesin. Pour in the blended chillies.
  • Masak cili hingga garing dan wangi. Cook the chillies thoroughly until the aroma arises.
  • Masukkan hirisan dari 1 biji bawang besar. Add in slices of 1 onion.
  • Masukkan sedikit air asam jawa. Add in a little tamarind juice.
  • Masak hingga bawang lembut. Cook further until the onion softens.

  • Masukkan udang. Add in the prawns.
  • Kacau dan masukkan garam dan sedikit gula (jika suka).Kacau lagi sehingga udang masak. Stir well and add in salt and a little sugar (if preferable).Stir further until the prawns are cooked.

Alhamdulillah…..it’s done.  Alhamdulillah….. dah siap.
