Sambal kuini


  • Cili dan belacan. Chillies and prawn paste.
  • Tumbuk hingga lumat cili dan belacan.Masukkan hirisan kuini dan tumbuk kasar buah kuini.Kacau isi buah dgn.sambal. Pound the chillies and prawn paste till fine.Add in slices of mangifera odorata.Pound the fruit pulp coarsely and mix well with the chilly paste.
  • Tambah sikit  garam jika belacan kurang masin.Tambah air asam limau atau cuka (kami guna cuka nipah HPA).Tak spt.buah macang yg.agak masam,buah kuini manis dan sambal perlu ada rasa masam sikit.  Add in a pinch of salt shld.the prawn paste is not salty enough.Unlike the mangifera foetida,which is more sourish,mangifera odorata is sweet thereby we need to add lime juice or vinegar(here we use organic vinegar,palm vinegar).
