Ikan toman  Giant snakehead

Sejenis ikan darat/air tawar.Satu famili dgn.haruan/aruan dan bujuk (snakehead family).Ikan ni dipancing di Tasik Banding.   A freshwater fish. Belonging to the snakehead family.This fish was angled out at Tasik Banding,Perak.

Mempunyai sepasang sirip tepi yg.berwarna merah kelabu.Cantik. Subhanallah. Has a pair of reddish grey pectoral fins.Beautiful. Subhanallah. 

Pisau gerigi kecil ni digunakan utk.memotong badan ikan.Hanya kepala dipotong menggunakan pisau cincang. This small serrated knife was used to slice the body.Only the head was chopped off with a cleaver.

Kari Kepala Toman.Fishhead Curry

 Ramuan2 yg.digunakan. The ingredients used.

Potong dan bersihkan ikan. Cut and clean the fish.

  • Panaskan minyak dlm.kuali.Tumis bwg.besar,bwg.putih dan daun karupulai. Heat oil in a wok.Fry the sliced onion,garlics and the curry leaves.
  • Goreng hingga kuning keemasan. Fry till golden brown.
  •  Masukkan sedikit air.  Add in a little water.
  • Masukkan serbuk kari.  Add in the curry powder.
  • Sebatikan air dan serbuk kari.  Mix thoroughly the water and the curry powder to form a paste.
  • Goreng hingga wangi. Fry till it emits aroma.
  • Masukkan air asam jawa. Add in the tamarind juice.
  • Kacau hingga kering. Stir till it dries out.
  • Tambah air. Add water.
  • Masukkan santan.Biar mendidih.Santan perlu dimasak lama supaya kari tahan lama. Pour in the coconut milk. Let it boils.The coconut milk should be cooked longer so as the curry would not turn bad easily.

  •  Masukkan ikan. Add in the fish.
  • Tambah sedikit air lagi dan biarkan sehingga ikan masak.Balik2kan ikan sekali dua. Add a little more water and let the fish cook through.Once in a while turn the fish over.
  • Masukkan bendi dan cili.Boleh tambah hirisan tomato. Throw in the lady’s finger/okra and the chillies.Can add in slices of tomato if you wish to.
    Kepekatan kari terpulang kepada citarasa masing2. The thickness of the curry depends on the individual taste.
    Alhamdulillah…dah siap. Alhamdulillah…it’s ready.
