Daging hitam manis

Boleh kecilkan sukatan kerana ini untuk makan ramai dan utk sepanjang hari. Can size down the measurements coz this dish was prepared for several persons and to be taken for the whole day.

2 kg daging dipotong lebar. 2 kg meat (beef or mutton) to broadly sliced.

  • 2 genggam cili kering,buang biji,rebus sebentar dan mesin.{cili dan bawang penentu kepekatan kuah — jika nak kuah pekat tapi kurang pedas,kurangkan cili tapi tambahkan bawang}.  2 handfuls of dried chillies,remove seeds,boil for awhile and blend.{the chillies and onions determine the thickness of the gravy — if a thick gravy is preferred but less hot,then lessen the amount of chillies but increase the amount of onions}
  • Banyakkan buah pelaga dari rempah2 lain. The amount of cardamom used should exceeds other spices.
  • Bawang besar dihiris kasar. Sliced coarsely onions.
  • Kisar bawang besar. Blend the sliced onions.

  • Tumis bawang putih dan halia yg telah dihiris halus. Fry finely sliced garlic and ginger.
  • Masukkan kayu manis,bunga lawang dan buah pelaga.Goreng sampai kuning keemasan. Add in cinnamon sticks,star anise and cardamoms.Fry till golden brown.
  • Masukkan cili kering yg dimesin. Add in the blended dried chillies.
  • Goreng cili hingga masak dan wangi. Fry the chilly paste till thoroughly cooked and aromatic.
  • Masukkan bawang kisar. Add in blended onions.
  • Sebatikan cili dan bawang dan biar mendidih dan bawang masak.Kalau daging yg lambat empuk,boleh masukkan sekali dengan bawang.  Mix thoroughly the chillies and onions and let it simmer or until the onions are cooked. For tougher meat we can put in the onions and meat in one go.

  • Masukkan daging. Add in the meat.
  • Kacau sebati daging dan kuah. Mix thoroughly the meat and the gravy.
  • Tutup kuali dan biar hingga daging empuk.Tambah air jika perlu utk empukkan daging. Cover the wok with a lid and let the meat cooked through. Add in some water if needed to softened the meat.
  • Masukkan sedikit kicap manis. Add  in a little sweet soy sauce.
  • Bila kuah hampir pekat masukkan sedikit lagi kicap manis,agak2 tidak terlalu gelap seperti masak kicap atau jangan terlalu kurang dan masakan seperti sambal tumis pula.Rasa dulu,kalau perlu ditambah gula dan garam. When the gravy almost thickens add in a little more sweet soy sauce , the amount shouldn’t darken the gravy as such like cooking meat in dark soy sauce or on the other hand it shouldn’t be too little likened to cooking meat in chilly paste.Taste the dish before adding salt and sugar.

Alhamdulillah… the dish is ready. Alhamdulillah … hidangan dah siap.
