(Megalaspis cordyla)

 Sejenis ikan laut. Peribahasa : Cencaru mkn.petang :pekerjaan yg.lambat tetapi hasilnya baik.  Torpedo scad. A marine fish.

 

Cencaru belah belakang

  • Buat dua belahan di sepanjang sirip  belakang. Make 2 cuts along the dorsal fins.
  • Masukkan sambal ke dlm.’poket’.   Fill the “pockets” with the chilly paste.
bahan-bahan / ingredients

Siapkan sambal. Prepare the chilly paste.

Tumbuk cili kering dgn.belacan.Tumbuk halus.  Pound the dried chillies with the prawn paste.Pound the chillies as fine as you can.

Masukkan bawang besar.  Tumbuk hingga halus. Add in sliced onions. Pound till fine.

  • Tambahkan air asam jawa. Chillies and onions. Add in the tamarind juice.
  • Masukkan gula dan garam. Add in salt and sugar.

Goreng dlm.minyak panas. Goreng kedua belah. Fry in hot oil. Fry on both sides.

Sementara itu ,goreng lebihan sambal. Goreng sambal hingga hampir garing. Meanwhile fry the remaining chilly paste. Fry the paste till almost brown.

Pour the fried chilly paste over the fried fish. Alhamdulillah……   Tuangkan sambal goreng ke atas ikan. Alhamdulillah…..
