Bahan2 utk.sambal. Ingredients for the chilly paste.

Ikan bilis dibasuh dan digoreng hingga garing  .  Wash and fry the anchovies till crispy.

ingredients
  • Hiris bwg.besar dan cincang bwg.putih. Slice the onions and garlic.
  • Tumis bwg.putih hingga kuning keemasan. Fry the chopped garlics til golden brown.
  • Masukkan cili kering mesin. Add in the blended dried chillies.
  • Goreng hingga cili masak dan pekat.Masukkan air asam jawa.Kacau dan biar sekejap. Fry the chillies till cooked and thickened.Add in the tamarind juice.Stir and let it be for awhile.

  • Masukkan hirisan bwg.besar dan goreng hingga layu. Add in the slices of onion and fry further till onions softened.
  • Masukkan ikan bilis dan kacau hingga sebati.Tutup api. Add in the anchovies and mix well with the chillies.Turn off the stove.

Sambal ikan bilis boleh dimakan dgn.nasi,pulut,roti atau ubi kayu rebus. This dish is deliciously taken with rice,glutinous rice,bread or boiled tapioca.

 

 

Lebihkan minyak untuk menumis….. versi ni lebih wangi.

Ikan Selangat (Anodontostoma chacunda)

Sejenis ikan laut.Badan lebar dan sedikit leper.Ikan ni mempunyai banyak sisik halus. Mempunyai banyak tulang halus.

Shortnose gizzard shad. A marine fish.It has a broad and slightly flat body.It is covered with many small scales.It also has many fine bones.

Goreng asam

Fried fish in tamarind paste.

Ikan dibuang kepala dan perut.Cuci bersih dan kelar.(Ikan ni dikelar rapat2 dan banyak supaya tulang2 yg halus tu diputus2kan).Lumur dgn.asam jawa yg.dicampurkan sedikit air dan garam.Goreng dalam minyak panas.Kalau goreng garing tak rasa tulang yg.halus2 tu. Remove fish head and gut.Wash clean and give multiple and closed slashes.(The purpose of making many closed slashes is to ensure that the fine bones are shortened) Coat the fish with tamarind paste with a little water added plus a sprinkle of salt. Fry in hot oil.If it is fried till crispy,then u’ll not get into trouble with the bones.’

Alhamdulillah… dah siap. Alhamdulillah… it’s ready.
