Sotong kari pekat

1 kilo sotong,buang kulit jika suka.Buang pundi dakwat dan mulut. 1 kg squids,remove skin if preferred.Remove the ink sac and mouth.

  • Tumis bawang besar dan daun karupulai. Fry sliced onion and curry leaves.
  • Masukkan hirisan halia dan bawang putih. Goreng hingga perang keemasan. Add in sliced ginger and garlics.Fry til golden brown.
  • Masukkan air. Pour in water.
  • Masukkan 2 senduk gulai serbuk kari daging. Add in 2 ladles of meat curry powder.

  • Kacau rata dan biar rempah betul2 masak.Kalau tak mahu banyak minyak dalam masakan,perlu ditambah air supaya rempah akan masak secara didihan dengan air.Stir well and let the spice cook thoroughly. For those who don’t favour too much oil in their cooking, then we can add more water and let the curry paste cooked through boiling.
  • Masukkan sedikit air asam jawa. Add in some tamarind juice.
  • Kacau sebati dan biarkan sebentar. Stir and mix well. Leave for awhile.

  • Masukkan santan cair dari 1/2 biji kelapa.Add in thin coconut milk of 1/2 coconut.
  • Kacau dan masak hingga pekat.Stir and let the gravy thickens.
  • Masukkan sotong dan kacau rata.Biar sotong masak.Masukkan garam secukup rasa. Put in the squids and stir thoroughly.Let the squids be cooked through.Add in salt to taste.


Alhamdulillah….. can be taken with rice,bread or glutinous rice.  Alhamdulillah….. boleh dinikmati bersama nasi,roti atau pulut.

 

Sambal sotong kering

  • 250 g sotong kering. 250 g dried squids.
  • Rendam sotong kering dalam air (kalau nak kembang,biarkan lama dalam air,tetapi yg ni akan kurang masin,kena tambah garam dlm masakan). Soak the dried squids in water.

  • 1 1/2 genggam ~ 2 genggam cili kering dibuang biji dan direbus sebentar dan mesin hingga halus. 1 1/2 ~ 2 handfuls of dried chillies.Remove seeds and boil for awhile.Blend til very fine.
  • Tumis bawang putih di dalam kuali hingga kuning keemasan.
  • Fry chopped garlic in hot cooking oil til golden brown.
  • Masukkan cili kering mesin. Pour in the blended dried chillies.
  • Goreng hingga cili benar2 masak.(Kalau tak mau guna banyak minyak , tambah air sehingga cili benar2 masak). Fry til the chillies are thoroughly cooked.(If little oil is preferable,then we have to add more water til the chillies are properly cooked).

  • Sedikit asam jawa. A little tamarind.
  • Buatkan air asam jawa. Prepare the tamarind juice.
  • Masukkan air asam jawa. Add in the tamarind juice.
  • Kacau hingga kering. Stir til gravy thickens up.

  • Masukkan sotong dan tambah sedikit air. Add in the dried squids and some water.
  • Masukkan ubi kentang {jika suka}. Add potatoes {if preferred}.
  • Masak hingga ubi hampir2 empuk.Masukkan sedikit gula dan garam secukup rasa. Cook until the potatoes are almost softened.Add in a little sugar and salt to taste.
  • Masukkan hirisan bawang besar (2 biji) dan masak hingga bawang lembut dan kuah pekat. Add in slices of onions(2 onions) and cook until the onions are softened and the gravy thickens.

Alhamdulillah…..it’s ready.  Alhamdulillah….. dah siap
