Acar buah kurma

Ada lebihan buah kurma bulan Romadhon, buat saja acar buah kurma.There’re some leftover dates of Romadhon, good for a date achar.

Ada 2 peket (2 kg) buah kurma. There’re 2 packets (2 kg) of dates.

  • 2 genggam cili kering, dibuang biji, cuci dan goreng dengan sedikit minyak masak.Guna api yg.kecil sekali sbb. cili kering ni mudah hangit.Mesin halus.2 handfuls of dried chillies,remove seeds,wash and fry in some cooking oil.Turn on the mininum heat cos these chillies can be easily burnt.Blend.
  • 1 genggam hirisan halia. 1 handful of sliced ginger.

1/2 cawan biji lenga/bijan. 1/2 cup of sesame seeds.

  • Panaskan minyak dan tumis sedikit hirisan bawang putih dan halia hingga kuning keemasan.Heat some cooking oil in a wok,fry some sliced garlic and ginger til golden brown.
  • Masukkan cili mesin.Goreng hingga wangi. Pour in the blended chillies.Fry til aroma arises.
  • Masukkan hirisan halia. Add in slices of ginger.
  • Tambah sedikit air dan biar halia masak dan lembut.Masukkan 3 cawan cuka, 3 cawan gula dan garam secukup rasa.Warna kuah akan bertukar menjadi lebih gelap. Add in some water and let the ginger cooked through and softened.Add in 3 cups vinegar,3 cups sugar and salt to taste.The gravy will immediately changes colour to a darker shade.
  • Masukkan bijan dan biarkan ia masak.Add in the sesame seeds and let it cooks.

Masukkan buah kurma dan masak hingga kuah agak pekat.{Kuah yg cair bermakna kandungan airnya masih banyak, dan ni yg membuat acar cepat rosak,berkulat dsb.}.Add in dates and cook til the gravy thickens a little bit.{A thin gravy means that the water content is still high and this will make the acar turns bad faster}

Acar ibarat buah2 dalam sirap gula,bezanya ia pedas dan masam. The acar dish is like having fruits in a syrup with a sourish and spicy taste.

Alhamdulillah….. the acar tastes better(aging) after a few days cos by then the sugar and vinegar will cooperate well into the dish.  Alhamdulillah….. acar akan bertambah sedap selepas beberapa hari, sebab gula dan cuka akan lebih sebati.

 

Acar mangga/mempelam

Ada sahabat bagi buah mempelam muda.Menyicah pun dah …buat acar simple2 la pula buat habuan hari tak lalu makan.
A friend had given some young mangoes.

Kupas kulit mempelam dan rendam mempelam dalam air.Peel the skin and soak the mangoes in  water.

Potong kecil2 jika mahu isinya hancur.Cut into small pieces if we prefer softened pulps in the chutney.

  • 1~1 1/2 genggam cili kering (buang biji). Basuh dan sejat . 1~1 1/2 handfuls of dried chillies (remove seeds).Wash and strain off water.
  • Goreng dengan sedikit minyak. Fry in a little oil.
  • Kisar cili goreng(kalau giling lagi halus). Blend the fried chillies(will be finer if ground the traditional way).

  • Tumis bawang putih dan halia hingga kuning keemasan. Fry chopped garlic and ginger until golden brown.
  • Masukkan cili mesin dan 1/2 cawan hirisan halia. Add in blended chillies and 1/2 cup of sliced ginger.
  • Goreng hingga cili betul2 masak. Fry until the chillies are thoroughly cooked.

  • Masukkan hirisan mangga bersama air rendaman. Add in sliced mangoes together with the water.
  • Masak hingga kuah kering dan masukkan 3 cawan gula dan 1 cawan cuka dan garam secukup rasa. Cook till gravy thickens and add 3 cups of sugar and 1 cup of vinegar and salt to taste.
  • Masak hingga acar pekat. Cook further till the dish thickens.
