Ikan siakap masam manis

Ikan siakap ni adalah sejenis ikan laut. Terdapat juga jenis air tawar. The Asian sea bass is a marine fish. There is also the freshwater type.

Ikan siakap ni sedap dimasak masam manis atau dikukus saja ……. This Asian sea bass is delicious as a sweet sour dish or simply steamed.

Ikan siakap seperti sesetengah ikan mempunyai pundi udara. The sea bass like most bony fishes possesses an air sac or swim bladder.

Siakap masam manis

Siang dan cuci bersih ikan. Kelar2 di kedua2 belah ikan. {Hanya 2 ekor saja yg digunakan untuk masakan masam manis}.Cut and wash clean the fish. Make slits on both sides of the fish. {Only 2 fish were used for this sweet sour dish}.

Lumur garam kunyit. Goreng. Coat the fish with some salt and turmeric powder. Fry.

Kupas dan potong sebiji nenas dan rebus dengan 1 cawan gula hingga nenas lembut. Skin and slice 1 whole pineapple and boil in some water with 1 cup of sugar until the pineapple softens.

  • Tumis hirisan halia dan bawang putih( 5 ulas) hingga kuning keemasan. In some heated cooking oil, fry some chopped ginger and garlic( 5 pips).
  • Masukkan cili kering mesin (lebihkurang 10 biji cili kering) dan tumis hingga cili bertukar rona dan wangi. Add in blended dried chillies(roughly about 10 dried chillies) and fry until the chilly paste changes colour and emits aroma.
  • Masukkan nenas dan sirapnya sekali. Add in the pineapple slices together with its syrup. 
  • Masukkan sos tiram (3 cb), sos tomato (5 cb), sos cili (2 cb),kicap ikan (2 cb) dan garam secukup rasa. Add in 3 tbsp of oyster sauce, tomato sauce (5 tbsp), chilly sauce (2 tbsp),fish sauce (2 tbsp) and salt to taste.
  • Masukkan 5-7 biji cili padi yang dititik dan hirisan bawang besar. Add in 5-7 crushed small chillies and rings of onions.
  • Masak hingga kuah agak pekat. Cook until the sauce almost thickens.
  • Masukkan ikan yang telah digoreng tadi. Add in the fried fish.

Tuna sos nenas

Nenas dikupas dan dibelah dua.Sebahagian dihiris separuh bulatan dan sebahagian lagi dihiris kecil.Rebus dengan 1 cawan gula  hingga lembut. Peel one pineapple and cut it into half.Slice part of it into semi-circles and some into small sizes.Boil with 1 cup of sugar till it softened.

  • Tumis bawang putih dan halia hingga kuning keemasan. Heat oil and fry chopped garlic and ginger till golden brown.
  • Masukkan cili kering (1 genggam) yg.dimesin. Goreng hingga cili betul2 masak. Add in the blended dried chillies (1 handful of dried chillies).Fry till the chilly paste is thoroughly cooked.
  •  Masukkan nenas dan sirap.Masak hingga kuah hampir pekat. Add in the pineapples and the syrup.Cook till the gravy almost thickened.
  • Masukkan sos tomato,sos cili dan sos tiram. Tambah gula dan garam jika perlu. Add in the chilly sauce,tomato sauce and oyster sauce.Add in sugar and salt if required.

  • Goreng ikan tuna tetapi jgn garing. Fry the tuna but don’t let it crisp.
  • Masukkan ikan tuna goreng,hirisan bawang besar dan cili padi ke dlm sos.Biar bawang lembut. Add in the fried tuna,sliced onion rings and small chillies into the sauce.Let the onion softened.
