Asyik2 nasi ayam, apa kata tukaq jadi nasi kambing pulak…..permintaan drp. encik suami. For a change why not prepare mutton rice instead of chicken rice…..a request from mr hubby. Just substitute the chicken with mutton.

Penjual daging di pasar cadangkan beli satu peha kambing {2.12 kilo}. The butcher suggested us to buy one whole goat’s leg{2.12 kg}.

  • Cuci bersih daging kambing. Wash clean the mutton.
  • Rebus hingga empuk. Boil until tender.

  • Sejat daging rebus. Drain off the boiled mutton.
  • Lumur daging dengan sos tiram dan kicap soya pekat.Perap lebihkurang 1/2 jam.{perap terus dalam kuali ja}. Marinate the mutton with some oyster sauce and dark soy sauce for about half an hour.{marinated in a wok}.
  • Tuang 2 cwn minyak masak ke dalam daging yg diperap dan goreng dengan api yg paling kecil. Tak perlu goreng lama sebab daging pun dah memang masak. Pour in 2 cups of cooking oil and fry the mutton with the smallest flame. Fry for a short while only.

Bahan2 utk menumis nasi : 2 biji bawang besar,5 ulas bwg putih, 2 inci halia dan 5 helai daun pandan, 1 cb buah pelaga dan 1 cb jintan manis. Ingredients for cooking the rice : 2 onions, 5 pips of garlic, 2 inch ginger, 5 screwpine leaves, 1 tbsp cardamoms and 1 tbsp fennel seeds.

5 kole beras digunakan. Nisbah beras ke air — 1 : 1.5 . 5 mugs of rice were used and the ratio of rice to water is 1 : 1.5

  • Panaskan 2 cwn minyak dalam periuk. Heat 2 cups of cooking oil in a rice cooker. Masukkan daun pandan dan goreng hingga lembut. Add in the screwpine leaves and fry until softened.
  • Masukkan hirisan2 bwg besar, bwg putih dan halia. Goreng hingga lembut. Add in slices of the onions, garlic and ginger. Fry until softened.
  • Masukkan buah pelaga dan jintan manis. Goreng hingga kuning dan wangi. Add in the cardamoms and fennel seeds. Fry until golden brown and aromatic.

Masukkan air, garam dan 2 sudu kayu sos tiram. Biar mendidih. Add in water, salt and 2 wooden spoons of oyster sauce. Let it boils.

Masukkan beras yang telah dibasuh dan disejat. Biar hingga masak. Add in the washed and drained rice. Let the rice be cooked through.

Hidangkan nasi dengan sayur salad, sup, daging dan sos lada hitam. Serve the mutton rice with lettuce, soup, mutton and black pepper sauce.

Kerisi goreng

Ikan kerisi,macam ikan merah. Rona kemerahan di belakang dan kuning di bahagian bawah badan. Likened to the snapper, these threadfin breams have a pinkish colour on the dorsal side and yellowish on the ventral side. 

سبحان ٱلله

Keunikan ikan kerisi ni, ia mempunyai ekor yang bertali. The uniqueness of these golden threadfin breams is that they possess filamentous tails.

Hari ni nak goreng garam kunyit ja sebab yang berkuah dah buat dengan ikan lain. For today these breams will be only fried.
